I manually arrange images and I noticed that I use the Ctrl+O optimise-canvas option a lot. Not sure if it makes any technical difference, it just looks neater that way.
My suggestion is to add a new option to the Settings->Preferences area. When enabled, this option would automatically run the "optimize canvas" action right after you transform, add or delete an image, note etc. so the canvas is always has a best fit.

The general purpose of the canvas is to let you define your scene bounds in case you want to export your scene as a single image. If you're not using the export feature and don't want the canvas you can always hide it by setting the background color and the canvas color to the same color.
But yes, this could definitely be a setting, thanks for the suggestion!
